Communion Bread Recipe from Morocco
This communion bread recipe is used by the Ecumenical Christian Community, Ifrane, Morocco
A generous ¾ cup of boiling water
¼ cup honey
1 and ¼ tsp baking powder
1 and ¼ tsp salt
4 tsp oil
2.5 cups of flour
½ cup of cornmeal
A little extra oil for brushing on loaves
Mix the water and honey together well in a LARGE bowl
Add in this order: baking powder, salt, 4 tsp. oil, flour, cornmeal.
Mix well. Dough should be slightly sticky. Do not knead. Put flour on your hands and divide the dough into four balls and flatten each into a 1/4 inch thick disk.
With a knife, score the top of each loaf with a cross. Lay the loaves on a baking sheet. Bake at 350 F/177 C) for 10 minutes. Remove from oven and brush the tops of the loaves with oil. Bake an additional 5-8 minutes. Let cool.
Yield: four 8 oz. loaves. The loaves freeze well.
